Rest & Be Thankful took inspiration for their name from an inscription on a stone on top of Glen Croe in 1753, written by soldiers who were thankful to have made the long and steep ascent and had a place to rest. The company is the brainchild of Eamonn Jones and Aidan Smith, who between them run Fox Fitzgerald Whisky Trading Company. They developed a close relationship with ex-Bruichladdich directors & shareholders, Eamonn & Aidan proposed bottling their private casks of Bruichladdich, Octomore and Port Charlotte under the “Rest & Be Thankful name. Since then, the Rest & Be Thankful offering has evolved, and have included single casks from Scotland’s great distilleries such as Macallan, Highland Park, Springbank, Bunnahabhain and many more thus providing enthusiasts and malt lovers a spectrum of true expressions from the cask.
The Glenrothes Distillery is an award winning Speyside Single Malt Whisky of exceptional quality. A combination of many factors including unusually slow distillation process in tall copper pot stills deliver a characteristic sweet, fruity and elegant spirit. Each expression has its own unique personality, underpinned by the distinctive, hallmark characteristics of the distillery – ripe fruits, citrus, vanilla and an exquisite spicy finish all encased in the creamiest of textures and with a complex and well-poised balance.
This single cask whisky was distilled in 2009 at the Glenrothes Distillery and it was placed in an ex bourbon cask and left to mature for 10 years. In February 2020 it was bottled at 66.6% abv by the Rest & Be Thankful Whisky Co. Only 258 bottles were produced for worldwide distribution.
Our Tasting Notes
Nose: Orchard fruits of apricot, plums and apple, new leather shoes and Lockett lollies.
Palate: Dark fruits, caramelised sugar, friand cakes, stem ginger.
Finish: Scottish shortbread and pistachio nut praline.
