Rest & Be Thankful took inspiration for their name from an inscription on a stone on top of Glen Croe in 1753, written by soldiers who were thankful to have made the long and steep ascent and had a place to rest. The company is the brainchild of Eamonn Jones and Aidan Smith, who between them run Fox Fitzgerald Whisky Trading Company. They developed a close relationship with ex-Bruichladdich directors & shareholders, Eamonn & Aidan proposed bottling their private casks of Bruichladdich, Octomore and Port Charlotte under the “Rest & Be Thankful name. Since then, the Rest & Be Thankful offering has evolved, and have included single casks from Scotland’s great distilleries such as Macallan, Highland Park, Springbank, Bunnahabhain and many more thus providing enthusiasts and malt lovers a spectrum of true expressions from the cask.

The Fettercairn Distillery is situated in the small Scottish town of Fettercairn, very close to the Cairngorm Mountain range in Scotland’s Eastern Highland district. The distillery has an open topped mash tun, wooden washbacks and small stills. The spirit produced between 1995 and 2009 had a rather heavy and nutty style that was until a cooling ring was attached to the top of the swan neck. This cooling ring sprays cold water down the sides of the still which aids reflux and helps produce a lighter style spirit.

This single cask whisky was distilled in 2007 at the Fettercairn Distillery and it was placed in an ex bourbon cask and left to mature for 12 years. In February 2020 it was bottled at 57.2% abv by the Rest & Be Thankful Whisky Co. Only 316 bottles were produced for worldwide distribution.

Our Tasting Notes

Nose: Red fruits of strawberry and raspberry, orchard fruits of apple, pear and apricot. Toasted pistachio biscuits with a pinch of sea salt.

Palate: Valencia oranges, garden herbs and vanilla fudge with some sea salt.

Finish: Herbal with vanilla and a touch of oak.
