Rest & Be Thankful took inspiration for their name from an inscription on a stone on top of Glen Croe in 1753, written by soldiers who were thankful to have made the long and steep ascent and had a place to rest. The company is the brainchild of Eamonn Jones and Aidan Smith, who between them run Fox Fitzgerald Whisky Trading Company. They developed a close relationship with ex-Bruichladdich directors & shareholders, Eamonn & Aidan proposed bottling their private casks of Bruichladdich, Octomore and Port Charlotte under the “Rest & Be Thankful name. Since then, the Rest & Be Thankful offering has evolved, and have included single casks from Scotland’s great distilleries such as Macallan, Highland Park, Springbank, Bunnahabhain and many more thus providing enthusiasts and malt lovers a spectrum of true expressions from the cask.
The Craigellachie distillery was opened in 1891 by the Craigellachie Distillery Company Ltd and was mainly used for producing White Horse blended whisky. In 2004 they released their first single malt aged 14 years. The distillery is now currently owned by John Dewar and Sons and they collect the water for making whisky from a spring on Little Conval Hill. The distillery also uses worm tubs style condensers for their stills, this allows for the new make spirit to retain more of a sulphurous and meaty character. With this malt whisky you can expect perfume, sweetness and spice with a hint of mint and freshly cut lawn.
This single cask whisky was distilled in 2007 at the Craigellachie Distillery and it was placed in an ex bourbon cask and left to mature for 12 years. In February 2020 it was bottled at 54.6% abv by the Rest & Be Thankful Whisky Co. Only 299 bottles were produced for worldwide distribution.
Our Tasting Notes
Nose: Orchard fruits of apricot, pear and apple with a drizzle of warm honey and a touch of charred oak.
Palate: Dried orchard fruits, charred oak and baking spices.
Finish: Nutmeg and clove with green grapes.
