Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
The Ben Nevis Distillery is one of the oldest licensed distilleries in Scotland. The distillery is nestled at the foot of Britain’s highest mountain, Ben Nevis, which has a summit elevation of 4’406 feet above sea level giving its malt a renowned name ‘the dew of Ben Nevis’. This imposing mountain provides an impressive background to a traditional Scottish craft. The distillery was founded by ‘Long John’ Macdonald (no he was not a pirate) in 1825 and in 1848 in a cunning way of promotion presented a cask to Queen Victoria when she visited Fort William. They produce both malt and grain whiskies simultaneously due to installation in 1955 of a special still. Golden liquid plays a traditional part in supplying good warming Scottish hospitality in this wild part of Scotland.
This independent bottle by Signatory has been matured in a single ex refill Sherry butt for 10 years and it was bottled at 46% abv with no chillfiltration. It was distilled on the 5th of February 2010 and bottled on the 2nd of April 2020.
Our Tasting Notes
Nose: Grassy notes, orchard fruits of apple and pear, malted barley and some underlying raisins.
Palate: Briney and waxy with tropical fruits of melon and pineapple.
Finish: Citrus and grassy.
